Potato Churros
Ingredients
- Salad Potatoes 4 pieces
- Whole egg 2 pieces
- Sugar 3 tablespoons
- Olive Oil 15 fl oz
Step-by-Step Guide
Step 1
Boil the potatoes in their skins for 40 minutes (until they are completely soft). Peel and mash into a puree.
Step 2
Slightly dry them in the oven or in a deep skillet without adding oil. Cool, add the egg yolks, and mix well until you get a slightly stretchy mass.
Step 3
Using a pastry bag with a star tip, pipe the dough into churros shape into the hot oil. Fry for 5 minutes until golden and crispy.
Step 4
Using a slotted spoon, transfer the churros to an absorbent paper towel, then roll them in sugar. Serve very hot.
