Description

Potato and Savoy Cabbage Soup with Bacon

Ingredients

  • Onion 1 head
  • Celery stalk 1 piece
  • Carrot 1 piece
  • Garlic 2 cloves
  • Olive Oil 1 tablespoon
  • Salad Potatoes 20 oz
  • Semi-Smoked Sausage 8 pieces
  • Chicken Broth 0 qt
  • White Cabbage 5 oz

Step-by-Step Guide

Step 1

Finely chop the onion, carrot, celery, and garlic.

Step 2

In a pot, heat the olive oil and add the finely chopped vegetables and peeled, diced potatoes. Reduce the heat, cover, and cook on low for 5 minutes until the potatoes start to soften.

Step 3

Pour in the broth, increase the heat, and bring to a boil. Reduce the heat and simmer for 5 minutes until the vegetables are tender.

Step 4

Meanwhile, in a well-heated skillet, fry the sliced bacon until crispy.

Step 5

Thinly slice the Savoy cabbage, removing the core.

Step 6

Blend the soup until smooth. Pour it back into the pot and add the cabbage. Cook for a few minutes until the cabbage is tender, season with salt and pepper.

Step 7

Serve topped with crispy bacon.
