Ingredients

  • Green onions 1 bunch
  • Olive Oil 1 tablespoon
  • Onion 1 head
  • Leek 15 oz
  • Potatoes 2 pieces
  • Vegetable Broth 3 cups
  • Grated Ginger 2 teaspoons
  • Salt to taste
  • Lemon Juice 1 teaspoon
  • Lemon 1 piece

Step-by-Step Guide

Step 1

In a large pot, heat the oil. Add the onion and sauté over low heat, stirring occasionally, until the onion is golden brown.

Step 2

Add the leek, potatoes, broth, and ginger.

Step 3

Bring to a boil, cover, reduce heat, and simmer until the potatoes are soft, about 20 minutes.

Step 4

Remove from heat and let cool for 10 minutes.

Step 5

Using a slotted spoon, transfer all solid ingredients to a blender or food processor.

Step 6

Blend thoroughly, stopping occasionally to scrape the mixture from the sides to the center.

Step 7

While the blender is running, gradually pour in the liquid until the desired consistency is reached. Season with salt and lemon juice.

Step 8

Ladle into bowls, garnish with lemon and green onions.
