Potato and Chicken Breast Puree Soup

Ingredients

  • Salad Potatoes 5 pieces
  • Skin-On Chicken Breasts 1 piece
  • Carrot 1 piece
  • Onion 1 piece
  • 10% cream 10 fl oz
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the chicken breast into small cubes, the carrot into thin rounds, and the onion into rings. Combine everything in a pot with water, add salt, and cook until the chicken is done (or until the carrot is soft).

Step 2

Cut the potatoes into pieces, add salt, and cook until tender.

Step 3

Once the chicken is cooked, drain the broth into a separate container. Blend the chicken, carrot, and onion mixture into a puree.

Step 4

Add the potato puree to the chicken mixture and blend again.

Step 5

Pour in 300 ml of cream into the mixture, then add the broth left over from cooking the chicken to achieve the desired consistency (some prefer a very thin soup, so add more broth if needed).

Step 6

Taste for salt; if it’s bland, add more. Then briefly heat on the stove — as soon as the soup starts to boil, remove from heat. It’s ready to serve!
