Pork Teyasu
Ingredients
- Pork Neck 5 lbs
- Vegetable Oil 2 tablespoons
- Soy Sauce 5 fl oz
- Garlic 3 cloves
- Sugar 2 teaspoons
- Sake 3 tablespoons
- Grated Ginger Root to taste
- Green onion tops 4 pieces
Step-by-Step Guide
Step 1
Roll the pork and tie it tightly with thick cotton thread to form a log, place it in a skillet and fry until a brown crust forms.
Step 2
In a large pot, place the log, sugar, soy sauce, sake, onions, garlic, and slightly crushed ginger root. Add water just to cover the meat. Bring to a boil, skimming off the foam.
Step 3
Switch the stove to low heat and simmer for another two hours.
Step 4
Leave the meat in the broth until it cools, then remove it and wrap it in foil.
Step 5
Skim off excess fat from the broth.
