Ingredients
- Pork fat 20 oz
- Sugar 5 oz
- Orange zest 1 tablespoon
- Cognac 0 fl oz
- Wheat Flour 0 oz
- Baking Powder 0 oz
Step-by-Step Guide
Step 1
Boil the pork skin in lightly salted water at a gentle simmer for one and a half hours until tender. Then process in a food processor until smooth, add sugar, flour, zest, and baking powder, mix well, and pour in the brandy.
Step 2
Place the resulting dough into a piping bag and squeeze it onto a pre-greased baking sheet, either in flat rings or in towers.
Step 3
Place the baking tray in an oven preheated to 355°F and bake for about twenty to thirty minutes.
