Poppy Seed Roll with Cranberries
Ingredients
- Wheat Flour 20 oz
- Sugar 5 oz
- Dry yeast 0 oz
- Dried cranberries with sugar 5 oz
- Butter 5 oz
- Citrus Zest Mix 1 teaspoon
- Milk 15 fl oz
- Powdered Sugar 5 oz
- Egg white 1 piece
- Vanilla salt 3 teaspoons
- Poppy seed paste 5 oz
- Salt a pinch
Step-by-Step Guide
Step 1
Mix the flour and one packet of dry yeast, add 100 g of sugar and 200 ml of milk, and mix thoroughly. Incorporate the egg, 80 g of butter, salt, and lemon zest. Knead the dough. Leave it in a warm place for an hour.
Step 2
Combine the remaining milk with sugar and vanilla sugar, bring to a boil. Pour over the poppy seeds and let steep under a lid for 30 minutes. Add the cranberries and 25 g of butter.
Step 3
Roll out the dough into a rectangle measuring 20x30 cm, spread the poppy seed filling, and roll it up. Line a baking sheet with parchment paper and place the roll seam side down. Dust with flour, cover with a cloth, and let it rest for an hour.
Step 4
Preheat the oven to 355°F. Bake the roll for one hour. When serving, dust with powdered sugar.
