Poppy Seed Roll
Baking and Desserts • Ukrainian
Description
Margarine can be replaced with butter. Instead of dry yeast, you can use fresh yeast (25–30 g). Use high-grade wheat flour. In the dough, use 3 tablespoons of vegetable oil during kneading, and the rest for greasing during shaping. 500 grams (1 package) of poppy seed paste or ready-made poppy filling will be enough for two rolls. Dried poppy seeds can be used for sprinkling, if desired.
Ingredients
- Milk 10 fl oz
- Margarine 5 oz
- Dry yeast 0 oz
- Sugar 6 tablespoons
- Chocolate eggs 2 pieces
- Wheat Flour 35 oz
- Salt 0 oz
- Vanillin 0 oz
- Vegetable Oil 0 fl oz
- Poppy seed paste 20 oz
- Poppy seed paste to taste
- Whole egg 1 piece
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Make the sponge: in 50 ml of warm milk, add 1 tablespoon of sugar, the yeast, and mix until smooth. Gradually add flour while stirring constantly to achieve a consistency similar to liquid sour cream without lumps. Cover with a cloth and place in a warm place to rise until doubled in volume and a 'bubbly cap' forms. Prepare the enriched dough: place the remaining milk, sugar, and margarine (or butter) in a small bowl and heat gently until the sugar and margarine dissolve (do not let it boil!). Add vanillin, salt, and eggs to the sifted flour.
Step 3
Knead the dough: pour the risen sponge and enriched mixture into the sifted flour with vanillin, salt, and eggs. Add 3 tablespoons of vegetable oil to the dough. After kneading, the dough should be soft and not stick to your hands. Cover the dough and place it in a warm place to rise.
Step 4
Once the dough has doubled in volume, punch it down.
Step 5
Divide the dough in half. Flatten each piece of dough on the table and grease it with vegetable oil using your hands (not a rolling pin!). The thickness should be about 1 cm. Then take the poppy seed paste and spread it on the dough.
Step 6
Using a silicone spatula (or knife, spoon), evenly distribute the filling over the dough. Roll it up tightly.
Step 7
Line a baking sheet with parchment paper and grease it with melted butter. Place the roll on it. Cover the roll with paper and place it in a warm place for 20 minutes to rise. Once the roll has risen, brush it with beaten egg yolk and sprinkle with dried poppy seeds. Bake in a preheated oven at 355°F for 30–40 minutes.
Step 8
Remove the roll from the oven and let it cool.
Step 9
Slice the cooled roll, arrange it on a plate, and enjoy the delightful aroma of poppy and vanilla.
