Poppy Seed Buns with Yeast Dough
Ingredients
- Butter 10 oz
- Wheat Flour 20 oz
- Chicken Egg 1 piece
- Dry yeast 0 oz
- Salt to taste
- Milk 5 fl oz
- Citrus Zest Mix to taste
- Sugar 5 oz
- Honey 2 spoons
- Poppy seed paste 5 oz
Step-by-Step Guide
Step 1
Prepare the starter: crumble the fresh yeast and dissolve it in a few tablespoons of warm milk, then add half of the sugar specified in the recipe. Cover the container with the starter with a cloth and leave it in a warm place for about 20 minutes. Sift the flour, cut the chilled butter into pieces, and rub the butter into the flour. Add the sugar and lemon zest. Pour in the starter, mix well, and add enough milk to form a pliable dough. Knead the dough until it easily comes away from your hands. Transfer the dough to a bowl, cover it with a cloth, and let it rise in a warm place for about an hour.
Step 2
For the filling, heat the milk and stir in the sugar and honey. Pour the resulting mixture over the ground poppy seeds and simmer on low heat. Allow the filling to cool.
Step 3
Divide the dough into pieces and roll each piece into a ball. Cover them with a cloth and let them rise.
Step 4
Roll each ball into a strip about 5 mm thick. Spread a layer of poppy seed filling over the strip, smoothing it out, then roll the strip into a log. Stand the log upright and gently press it against the board to widen the base slightly. Shape the top into a rosebud.
Step 5
Line a baking sheet with parchment paper and place the rolls on it. Beat an egg and brush each roll with it. Place a deep pan with boiling water in the oven. Bake the rolls for at least 30 minutes (until done) in a preheated oven at 200°C (392°F). Once baked, transfer the rolls to a wire rack, mist them with water, cover with a napkin, and let cool. Serve with tea.
