Polenta Cookies
Ingredients
- Wheat Flour 1½ cups
- Polenta 5 oz
- Butter 5 oz
- Farm fresh eggs 2 pieces
- Citrus Zest Mix 4 tablespoons
- Sugar 0.3 cups
- Salt ½ teaspoon
- White Beans 1 piece
Step-by-Step Guide
Step 1
Mix the flour, polenta, and salt.
Step 2
Scrape the vanilla by splitting the bean lengthwise.
Step 3
In a mixer, combine the softened butter, sugar, vanilla, add the eggs, and gradually mix in the flour and polenta mixture (if too thick, add a couple of tablespoons of water). The dough should be firm yet pliable enough to be piped from a pastry bag.
Step 4
Fill a pastry bag, then pipe the mixture in a zigzag pattern resembling the letter S onto a baking sheet lined with parchment paper. If you don't have a bag, you can roll a cone from parchment paper and pipe it in any shape.
Step 5
Bake in the oven at 375°F for 10–15 minutes.
Step 6
Allow to cool on a wire rack.
