Plum, Raspberry, and Red Wine Compote with Vanilla Whipped Cream
Ingredients
- Plums 30 oz
- Raspberry leaves 15 oz
- Rosé Dry Wine 25 fl oz
- Water 1½ cups
- Sugar 1.3 cups
- White Beans 1 piece
- Whipped Cream 1¼ cups
- Vanilla extract ½ teaspoon
Step-by-Step Guide
Step 1
In a large bowl, combine the plums cut into 6 pieces and the raspberries. In a saucepan, mix the wine, water, and 1.25 cups of sugar. Extract the seeds from the vanilla bean and add the pod. Place over medium heat and stir until the sugar dissolves. Increase the heat and boil for about 20 minutes until the volume reduces to 2.6 cups. Pour the hot mixture over the plums and raspberries. Cool, cover, and refrigerate overnight.
Step 2
In a bowl, whip the cream with 1.25 tablespoons of sugar and vanilla extract.
Step 3
Spoon the fruit compote into glasses or dessert bowls and top with the vanilla whipped cream.
