Plum Cream

Ingredients

  • Plums 25 oz
  • Apple juice with pulp 5 fl oz
  • Citrus Zest Mix 1 teaspoon
  • Meyer Lemon Juice 1 tablespoon
  • Sugar 4 tablespoons
  • Farm fresh eggs 3 pieces
  • Cream 10 fl oz
  • Fresh Mint 1 bunch

Step-by-Step Guide

Step 1

Remove the pits from the plums and cut them into small cubes, cook in apple juice until soft, and strain through a sieve.

Step 2

Add lemon juice and zest and heat.

Step 3

Whip the eggs with sugar until frothy. While continuing to whip, add the hot plum puree. Bring to a boil, but do not boil.

Step 4

Cool the finished cream, divide it into bowls, and chill.

Step 5

Before serving, garnish the cream with mint leaves.
