  • Plums 0 lbs
  • Sugar 10 oz
  • Water 15 fl oz
  • Lemon ¼ pieces
  • Vanilla salt 0 oz

Wash the plums and remove the stems. Prick the plums in several places with a pin or toothpick.

Immerse the plums in hot water (about 185°F) for 4 to 5 minutes to prevent them from splitting later.

Cook a syrup from sugar and water.

Add vanilla sugar and lemon juice. Let the syrup steep for 10 minutes.

Pour boiling water over the jars to heat them and then fill them with plums.

Pour the hot syrup over the plums.

Place a rack or a kitchen towel at the bottom of a large pot. Arrange the jars on top (they should not touch each other or the bottom of the pot!), and cover the jars with lids. Pour in hot water until it reaches the jars' shoulders. Cover the pot with a lid.

Bring the water to a boil, then pasteurize 1-liter jars for 25 minutes, 700–800 ml jars for 20 minutes, and 400–500 ml jars for 15 minutes.

Seal the jars.

Flip it over and cover with a blanket. The compote will be ready in a day, but it can be stored for a long time.
