Ingredients

  • Plums 20 oz
  • Ground Cinnamon 1 teaspoon
  • Corn Starch 2 tablespoons
  • Wheat Flour 1 cup
  • Sugar 3 tablespoons
  • Salt ½ teaspoon
  • Butter 0 oz
  • Milk 1 cup
  • Baking Powder 1½ teaspoons
  • Meyer Lemon Juice 1 tablespoon

Step-by-Step Guide

Step 1

Preheat the oven to 410°F.

Step 2

Cut the plums into quarters, removing the pits.

Step 3

In a small saucepan, combine the plums, 1 cup of sugar, and cornstarch, sprinkle with cinnamon, and add lemon juice.

Step 4

Mix everything together and place on the stove. Cook over low heat, stirring, until the mixture comes to a boil and begins to thicken. Let it boil for 2 minutes. The mixture will resemble a jelly with pieces of plums.

Step 5

In a bowl, mix room temperature butter, cut into cubes, with 3 tablespoons of sugar and salt.

Step 6

Add the flour mixed with baking powder and mix well.

Step 7

Add room temperature milk and mix again.

Step 8

Pour the berry mixture into a glass or any other baking dish without greasing it with butter.

Step 9

The dish should not be too wide; otherwise, the batter will push out the filling. In other words, the layer of the berry mixture should be thick enough to hold the batter on top.

Step 10

Spoon the batter over the berry mixture in 4–6 portions. Leave gaps between the batter so the berry mixture can breathe. Do not smooth the batter.

Step 11

Place in the oven and bake for about 30 minutes or until a golden crust forms.

Step 12

Let the cobbler cool and serve with a scoop of any ice cream.
