Piti in a Portion Pot

Description
Serve bread, dried plums, and saffron on the table. We eat, as is customary in Azerbaijan, first as a soup (pouring the broth from the pot), then as a main dish (adding dried plums and saffron to what remains in the pot).
Ingredients
- Lamb 15 oz
- Onion 5 oz
- Fat Tail Fat 5 oz
- Saffron to taste
- Chickpea 5 oz
- Plums 3 pieces
Step-by-Step Guide
Step 1
Soak the chickpeas overnight (regular peas will turn mushy).
Step 2
Finely chop the meat and onion.
Step 3
Layer the chickpeas, lamb, onion, and top with tail fat in the bottom of the pot.
Step 4
Pour in cold water and add salt.
Step 5
Cook on very low heat for 2 hours, periodically skimming off the foam.
