Description
The classic flavor of pistachio ice cream is achieved by blending several types of nuts and aromatic additives, which are not always available separately. Therefore, it is better to use a prepared paste.
Ingredients
- Milk 10 fl oz
- Dry Malted Milk Powder 0 oz
- Sugar 0 oz
- Whole egg 2 pieces
- 10% cream 0 fl oz
- Ground Black Pepper to taste
- Pistachios 2 spoons
- Dextrose 0 oz
Step-by-Step Guide
Step 1
Mix together sugar, dextrose, and powdered milk. Then measure the amount of egg yolk: weighing is not necessary, as the yolks from two eggs weigh about forty grams.
Step 2
Heat the milk to 165°F: bring it to a light boil, then turn off the heat and let it cool for ten minutes.
Step 3
In warm milk, add the egg yolks and cream, mix thoroughly, then pour in the dry mixture, add the pistachio paste, and blend the mixture with a blender.
Step 4
Place the mixture in the refrigerator until completely cooled, and only then transfer it to the ice cream maker and churn until ready: this will take about forty minutes. Garnish with freshly ground black pepper and sprigs of fresh herbs.
