
Pistachio Financier with Brown Sugar

Description
Financier is a small French cake that is often mistaken for a cookie. This cake is similar to a sponge cake but is more moist. A distinctive feature of the recipe is the preparation of the butter — beurre noisette (brown butter). In France, where this dessert originates, it is preferred to make it in a rectangular shape, resembling a gold ingot, as financiers became popular in the financial district of Paris. However, other shapes of this dessert are also acceptable.
Ingredients
- Butter 5 oz
- Wheat Flour ½ cup
- Sugar ½ cup
- Brown Sugar ½ cup
- Salt a pinch
- Pistachios 1 cup
- Chopped almonds 2 tablespoons
- Baking Powder 1 teaspoon
- Egg white 4 pieces
Step-by-Step Guide
Step 1
In a blender, grind 0.5 cup of pistachios and 0.5 cup of almonds into flour.
Step 2
In a pan over medium heat, brown the butter until it reaches a caramel color. Strain through a sieve into a bowl.
Step 3
In a bowl, mix the egg whites (without whipping), sugar, and salt. Add the flour, pistachio and almond flour, and baking powder.
Step 4
Mix everything well. Pour in the butter and mix again until smooth.
Step 5
Refrigerate for 1 hour.
Step 6
Preheat the oven to 355°F.
Step 7
Remove the batter and distribute it into rectangular mini muffin molds, filling them ¾ full. Sprinkle with chopped pistachios and bake until golden, about 16 minutes.
