Pink Apple Marshmallow
Ingredients
- Sugar 5 oz
- Apple 20 oz
- Vanilla salt 0 oz
- Powdered Sugar 5 oz
- Water 5 fl oz
- Gelatin 0 oz
- Chicken Egg 1 piece
- Beetroot 1 piece
Step-by-Step Guide
Step 1
Cut the apples in half, remove the seeds, and bake in the oven for 30 minutes at 180°C.
Step 2
Soak the gelatin in water.
Step 3
Blend the apples in a blender and strain through a sieve. Mix with vanilla sugar.
Step 4
Separate the yolk and white of one egg. Whip the apple puree, then add half of the egg white and continue whipping. Add the second half and keep whipping.
Step 5
Cook a syrup from water and sugar. Pour it into the puree and whip.
Step 6
Melt the soaked gelatin in a double boiler. Then add it to the puree with syrup. Whip the mixture for about 5 minutes until it doubles in volume and thickens.
Step 7
Transfer the finished marshmallow into a piping bag with a decorative tip and pipe onto parchment paper.
Step 8
To make the marshmallow pink, grate half of the beetroot, squeeze out the juice. Add the juice to the finished marshmallow mixture and stir.
Step 9
Leave in the refrigerator for 2 hours. Finally, sprinkle the marshmallow with powdered sugar. The marshmallow is ready!
