  • Pineapple 1 piece
  • Egg white 2 pieces
  • Wheat Flour 10 oz
  • Brown Sugar 10 oz
  • Baking Powder 1 tablespoon
  • Rum 0 fl oz
  • Butter 10 oz
  • Lime 1 piece

Step-by-Step Guide

Step 1

Peel the pineapple and remove the core, cutting a 450 g piece.

Step 2

From the remaining part, cut a piece of about 150 g and puree it in a blender, blending the pineapple at maximum speed with the juice of 1 lime.

Step 3

Slice the pineapple into thin semicircles about 0.5 cm thick, then cut the semicircles into 2 cm pieces.

Step 4

In a skillet, melt 150 g of butter and add 150 g of sugar while stirring constantly.

Step 5

Once the sugar is completely dissolved, add the pineapple and sauté until the pineapple caramelizes and turns golden brown (if using canned pineapple, simmer for about 10 minutes; if fresh, simmer longer—about 20–25 minutes). Add the rum 5 minutes before the end of cooking the pineapple.

Step 6

Grease the sides and bottom of a springform pan with a piece of butter and dust with flour.

Step 7

Spread the pineapple mixture in the pan and smooth it out with a spatula.

Step 8

Preheat the oven to 355°F.

Step 9

For the batter, mix room temperature butter with the remaining butter, and while the mixer is running, add the two eggs.

Step 10

Mix well with the mixer and pour in 150 ml of pineapple puree.

Step 11

Mix again and add the flour with baking powder while stirring constantly.

Step 12

Carefully spread the batter over the pineapple mixture and smooth it out with a silicone spatula.

Step 13

Bake for 30–40 minutes depending on the size of the pan and the thickness of the batter layer.

Step 14

Check the doneness with a toothpick.

Step 15

Cool for 10 minutes before serving.

Step 16

Carefully remove the sides of the pan and invert the pineapple onto a plate.
