Pineapple Marmalato with Rosemary
Ingredients
- Pineapple 70 oz
- Sugar 55 oz
- Meyer Lemon Juice 1 tablespoon
- Rosemary 3 sprigs
Step-by-Step Guide
Step 1
Peel the pineapple and remove the core. Cut the flesh into cubes.
Step 2
Combine the pineapple flesh with sugar, add lemon juice and rosemary. Bring to a boil, reduce heat and simmer for 40 minutes, skimming off the foam.
Step 3
Remove from heat, discard the rosemary and let the marmalato sit covered overnight.
Step 4
The next day, simmer the pineapple mixture again for 15 minutes.
