Ingredients
- Pineapple 1 piece
- Sugar 5 oz
- Farm fresh eggs 3 pieces
- Cream (40%) 25 fl oz
- Liquid dark chocolate 5 oz
Step-by-Step Guide
Step 1
Cut the pineapple, peel it, and remove the hard core.
Step 2
Cut it into cubes and briefly blanch in boiling water.
Step 3
Make a puree, reserving 2 tablespoons of diced pineapple for later.
Step 4
Separate the yolk from the white.
Step 5
Whip the egg whites with 150 grams of sugar.
Step 6
Whip the chilled cream and add it to the egg whites.
Step 7
Gently fold the resulting mixture into the pineapple puree.
Step 8
Add the reserved 2 tablespoons of diced pineapple to the mixture. Stir.
Step 9
Pour the pineapple-cream puree into a mold and place it in the freezer for 12 hours.
Step 10
Prepare the cream — pour the cream into a saucepan, heat it over low heat, add the chocolate pieces, and cook until the chocolate is completely melted.
Step 11
Place the cream in the refrigerator for 12 hours. Then whip it.
Step 12
Remove the puree from the freezer and spread the cream on top. Then return the cake to the freezer for 3 hours.
Step 13
Take the cake out of the freezer 1 hour before serving.
