Pina Colada Muffins
Ingredients
- Wheat Flour 5 oz
- Sugar ¾ cup
- Baking Powder 1 teaspoon
- Salt ⅓ teaspoon
- Egg white 1 piece
- Activated Baking Soda ½ teaspoon
- Butter 0 oz
- Sour Cream 5 oz
- Dark rum 1 tablespoon
- Canned Pineapple Chunks 3 pieces
- Pineapple ½ cup
- Desiccated coconut ½ cup
Step-by-Step Guide
Step 1
Mix all the wet ingredients: sour cream, rum, pineapple syrup, egg, and melted butter.
Step 2
Mix the dry ingredients: flour, sugar, baking powder, baking soda (be sure to neutralize it to avoid a baking soda taste), and salt.
Step 3
Combine the dry and wet ingredients. Do not mix for too long, just enough to combine into a uniform structure.
Step 4
Add the pineapple. Add the shredded coconut and mix.
Step 5
Spoon the batter into muffin cups (I used silicone ones), sprinkle with shredded coconut on top, and bake in a preheated oven for 30–35 minutes at 355°F.
