Description

During the reign of Ivan the Terrible, pike caviar was valued more than red caviar because it has a very beautiful amber color when salted.

Ingredients

  • Pike Caviar 20 oz
  • Salt 4 teaspoons
  • Vegetable Oil 0 fl oz

Step-by-Step Guide

Step 1

Prepare all the ingredients.

Step 2

Carefully extract the pike caviar from the fish and remove all blood vessels.

Step 3

Place the caviar in a large bowl, add a little salt, and start mixing with a whisk.

Step 4

When the salt dissolves, add a little more and continue mixing. Add all the salt this way. This should take about 10–15 minutes.

Step 5

When bubbles and a light foam appear, it's ready.

Step 6

Add vegetable oil for more elasticity.

Step 7

Refrigerate for a day, then distribute into sterilized jars or containers. The caviar can be eaten immediately, stored in the refrigerator for about a month, or frozen.
