Description

From the initial amount of ingredients, you'll get about a liter of preserves.

Ingredients

  • Plums 25 oz
  • 9% Vinegar 0 fl oz
  • Salt ½ spoons
  • Star anise 1 piece
  • Allspice berries 6 pieces
  • Clove 2 pieces
  • Cinnamon 1 piece
  • Bay leaf 2 pieces
  • Water 15 fl oz
  • Sugar 0 oz

Prepare all the ingredients. It’s best to use firm, slightly underripe plums.

Sterilize the jars over steam for 15–20 minutes.

Wash the plums and make small punctures in the skin at several places on each one. This is to prevent the skin from bursting.

In a pot, combine water, bay leaf, star anise, cinnamon, cloves, and allspice. Bring to a boil and simmer on low heat for 5 minutes.

Place the plums in a large container and pour the hot marinade over them. Let them sit for 15 minutes.

Pour the marinade back into the pot.

Arrange the plums in sterilized jars.

Add salt, sugar, and vinegar to the marinade, and bring it to a boil again until the sugar dissolves.

Pour the hot marinade over the plums in the jars. There's no need to add cinnamon and star anise to the jars.

Seal the jars, turn them upside down, and leave them under a blanket until they cool completely.
