Ingredients
- Onion 2 heads
- Olive Oil 5 fl oz
- Malt Vinegar 2 tablespoons
- Ground Black Pepper ½ teaspoon
- Dried Rosemary ½ teaspoon
- Bay leaf 2 pieces
- Spices to taste
Step-by-Step Guide
Step 1
Slice the onion very thinly using a mandoline (or knife). Squeeze it to release the juice.
Step 2
Layer the onion in a jar with spices, oregano, and bay leaves. Press down each layer and pour over the mixture of vinegar and olive oil.
Step 3
Leave the onions to sit at room temperature for 1 hour with the lid off, then refrigerate for 2 days.
