
Pickle Soup with Rice and Lamb

Description
Pickle soup can be made with the same ingredients using any meat, as well as vegetarian.
Ingredients
- Rice 5 oz
- Lamb 0 lbs
- Pickles 7 pieces
- Carrot 1 piece
- Onion 1 piece
- Bay leaf 2 pieces
- Green peppercorns 5 pieces
- Salt to taste
- Potato 3 pieces
Step-by-Step Guide
Step 1
Boil the lamb for 2.5–3 hours.
Step 2
Cut the potatoes into small cubes of 1.5 cm, add to the broth, previously removing and setting aside the meat on a plate (cut into portions).
Step 3
If the lamb is very fatty, trim the fat from the boiled meat and sauté finely chopped onion and grated carrot in a small amount of vegetable oil. Add finely chopped pickles. Sauté everything until the pickles are soft. If the pickles are tough, add a little broth to the pan.
Step 4
Rinse the rice in very hot water several times, add to the broth. At the same time, add the sautéed vegetables, and season with salt to taste.
Step 5
To achieve a delicious pickle aroma, you can add pickle brine to taste.
Step 6
Cook until the rice is partially cooked, add the bay leaf and pepper, let it simmer for 5 minutes, then turn off the heat. Cover with a lid and let it steep.
Step 7
Serve with sour cream and herbs.
