
Pickle Soup with Barley

Ingredients
- Beef 10 oz
- Pearl barley 5 oz
- Potato 2 pieces
- Onion 1 head
- Garlic 2 cloves
- Carrot 1 piece
- Pickled Cauliflower 3 pieces
- Herbs to taste
- Ground Black Pepper to taste
- Basil to taste
- Khmeli-suneli to taste
- Dry adjika to taste
Step-by-Step Guide
Step 1
Prepare beef broth.
Step 2
Peel and finely chop the onion and garlic. Peel and grate the carrot. Sauté everything in vegetable oil with the addition of spices.
Step 3
Cook the pearl barley until it is partially cooked.
Step 4
Peel the potatoes and chop them finely.
Step 5
As soon as the broth is ready, add the sautéed mixture, potatoes, and grains, and season to taste.
Step 6
5–10 minutes before it's done, add the chopped cucumbers and herbs.
