Pecan and Cranberry Bread

Ingredients

  • Unbleached flour crackers 10 oz
  • Wheat Flour 5 oz
  • Salt to taste
  • Water 10 fl oz
  • Pecan 5 oz
  • Dried cranberries with sugar 5 oz
  • Dry yeast 0 oz
  • Oranges 1 piece

Step-by-Step Guide

Step 1

Chop the nuts and mix them with cranberries and orange zest.

Step 2

Combine both types of flour, rub in the yeast until it forms fine crumbs. Add salt, water, the nut and berry mixture, and knead the dough. Form the dough into a ball, cover it, and let it rest for 45 minutes.

Step 3

Place the dough on a surface, divide it into 2 parts, and let it rest for another 5 minutes.

Step 4

On a floured surface, shape the dough into 2 loaves. Place them seam side down on a baking sheet lined with a towel and dusted with flour, and let them rise for 1 hour.

Step 5

Preheat the oven to 480°F.

Step 6

Transfer the loaves to an inverted baking sheet and make a crosswise slash with a sharp knife.

Step 7

Spray the oven walls with water from a spray bottle, reduce the temperature to 430°F, place the loaves inside, and bake for 5 minutes.

Step 8

Lower the temperature to 390°F and bake for another 30–35 minutes.
