  • Red port 25 fl oz
  • Concentrated Cranberry Juice ½ cup
  • Sugar 6 tablespoons
  • Orange zest 1 piece
  • Star anise 1 piece
  • Pears 3 pieces
  • Natural Yogurt 1 cup
  • Fresh Mint to taste
  • Powdered Sugar 2 tablespoons

Step-by-Step Guide

Step 1

In a saucepan, combine port wine, cranberry juice, sugar, orange zest, and star anise. Bring to a boil, stirring. Reduce heat to medium and simmer for 5 minutes.

Step 2

Peel the pears, remove the seeds, and cut them in half. Place them in the syrup and cook for 20 minutes until tender, uncovered, occasionally turning. Use a slotted spoon to transfer the pears to a large bowl.

Step 3

Bring the syrup to a boil and cook for about 15 minutes until the volume reduces to 1.25 cups and the syrup thickens. Pour the syrup over the pears. Cool at room temperature. Cover and refrigerate for 4 hours.

Step 4

In a small bowl, mix the yogurt and powdered sugar.

Step 5

On serving plates, elegantly pour the chilled syrup and place half a pear cut side down. Top with yogurt cream and mint, and serve.
