  • Lemon 1 piece
  • Cinnamon 1 piece
  • Ground Black Pepper ¼ teaspoon
  • Apple Cider Vinegar 25 fl oz
  • Ground clove ¼ teaspoon
  • Pears 8 pieces
  • Champagne Sorbet to taste

Step-by-Step Guide

Step 1

Peel the pears and carefully remove the core from the bottom using a small spoon, leaving the stem intact. Using a sharp knife, cut the lemon peel into strips.

Step 2

In a saucepan, combine the lemon peel, broken cinnamon stick, both peppers, vinegar, and 240 ml of water.

Step 3

Add the pears, cover with parchment paper, and bring to a boil. Reduce the heat and cook, occasionally turning the pears, for about 20 minutes until tender, but do not let the pears fall apart. Transfer the pears to a bowl.

Step 4

Return the saucepan to the heat and bring to a boil. Cook until it reaches a syrupy consistency, about 15 minutes. Remove the cinnamon. Pour the syrup over the pears. Cool.

Step 5

Serve the pears with lemon sorbet.
