Pears in Dried Cherry and Port Wine Sauce

Ingredients

  • Star anise 4 pieces
  • Port Wine 5 fl oz
  • Ground dried cherries 5 oz
  • Brown Sugar 1 tablespoon
  • Anjou Pear 4 pieces
  • Meyer Lemon Juice 1 tablespoon

Step-by-Step Guide

Step 1

In a saucepan, combine the port wine and cherries. Bring to a boil, reduce the heat, and simmer for 5 minutes. Then add the sugar and lemon juice. Let cool.

Step 2

Preheat the oven to 390°F. Prepare 4 pieces of parchment paper.

Step 3

Peel the pears, cut them in half lengthwise, and remove the core. Then slice them lengthwise into 10–12 pieces, without cutting all the way through at the stem end.

Step 4

Place 2 halves on the parchment, pressing them down slightly. Fold the edges slightly to create little boats. Drizzle with the port wine mixture and place the star anise on top. Wrap the parchment well and place on a baking sheet.

Step 5

Bake in the oven for 10–12 minutes, until the parchment puffs up.

Step 6

Plate and slightly open the parchment.
