Ingredients
- Conference Pear 4 pieces
- Ginger 0 oz
- Parmesan Cheese 0 oz
- Bittersweet Chocolate 5 oz
- 33% Cream 0 fl oz
- Thyme 1 stalk
- Flower Salt 0 oz
Step-by-Step Guide
Step 1
Remove the core from the pears and slice off the bottoms so that the pears can stand upright.
Step 2
Grate the ginger and Parmesan cheese using a fine grater. Mix the cheese and ginger together and use this mixture to stuff the cavity of the pears.
Step 3
Place the pears in an oven preheated to 355°F for thirty minutes.
Step 4
While the pears are baking, melt the chocolate in a double boiler and whisk it together with the heavy cream.
Step 5
Remove the pears, cut them in half, arrange them on plates, drizzle with chocolate cream sauce, and sprinkle with flower salt and thyme leaves.
