Pear Tarte Tatin with Puff Pastry
Ingredients
- Wheat Flour to taste
- Sugar ½ cup
- Puff Pastry 20 oz
- Apple Cider Vinegar 1½ teaspoons
- Butter 2 tablespoons
- Bartlett Pear 3 pieces
Step-by-Step Guide
Step 1
Peel the pears, remove the cores, and cut each into 6 wedges.
Step 2
Preheat the oven to 375°F.
Step 3
On a floured surface, roll out the pastry into a circle with a diameter of 30 cm and chill.
Step 4
In an ovenproof skillet, combine the sugar, vinegar, and 2 tablespoons of water. Cook over medium heat without stirring until golden, about 12–15 minutes. Then stir in the butter.
Step 5
Arrange the pears in a single layer in the skillet in a circle, reduce the heat, and cook until the pears are slightly soft, about 10–15 minutes. Remove from heat.
Step 6
Place the pastry over the pears and gently press the edges. Cover with a lid or plate to keep the pastry from rising, and bake in the oven for 15 minutes. Then remove the lid and bake for another 15 minutes until done. Carefully invert the tart onto a plate and serve warm.
