Pear Tart with Almond Cream
Ingredients
- Wheat Flour 5 oz
- Water 3 tablespoons
- Chopped almonds ¾ cup
- Sugar ¼ cup
- Egg white 1 piece
- Butter 0 oz
- Egg white 1 piece
- Almond ½ teaspoon
- Peach Juice 4 tablespoons
- Pears 3 pieces
- Meyer Lemon Juice to taste
- Apricot Jam 1 tablespoon
Step-by-Step Guide
Step 1
Roll out the dough thinly and place it in a tart pan (23 cm). Keep the dough in the refrigerator while you prepare the filling. Place the almonds and sugar in a food processor, chop them but do not turn them into a paste. Add the butter and beat until creamy, then add the egg, egg white, and almond extract and mix well.
Step 2
Place a baking sheet in the oven and preheat to 375°F. Peel the pears, cut them in half, remove the core, and drizzle with lemon juice.
Step 3
Place the pear halves cut side down on a board and slice them thinly without cutting all the way through.
Step 4
Spread the almond cream into the tart shell. Using a wide knife, place half of the pears on top and press down with your fingers to fan them out. Move the second half of the pears onto the filling so that they resemble spokes on a wheel. If desired, remove a few slices from each half before placing and use them to fill in the gaps in the center.
Step 5
Place on the baking sheet and bake for 50–55 minutes, until the filling is set and nicely browned. Cool on a rack.
Step 6
Meanwhile, heat the brandy or water with the jam in a small saucepan, then brush this mixture over the top of the hot tart for shine. Serve the tart warm.
