Ingredients
- Butter 5 oz
- Salt a pinch
- Almond 2 tablespoons
- 10% cream 5 fl oz
- Farm fresh eggs 2 pieces
- Vanilla salt 0 oz
- Wheat Flour 2 tablespoons
- Powdered Sugar 3 tablespoons
- Pears 2 pieces
Step-by-Step Guide
Step 1
Shortcrust pastry: beat the room temperature butter with powdered sugar.
Step 2
Add salt and flour, and knead the dough. The dough will be crumbly but workable.
Step 3
Roll out the dough to 0.3–0.4 mm thick, cut out a circle slightly larger than your tart pan.
Step 4
Carefully place the dough in the pan and refrigerate for 30 minutes + preheat the oven to 355°F.
Step 5
Remove the dough, prick it with a fork, and place a weight on top. Bake in the oven for 10 minutes, then remove the weight and bake for another 5 minutes.
Step 6
Filling: whisk the eggs, add cream, powdered sugar, vanilla sugar, and flour, and mix until lumps dissolve.
Step 7
Sprinkle the baked tart shell with almond flour, arrange the pears, and pour the filling over them.
Step 8
Place in the preheated oven at 355°F for about 40–45 minutes.
Step 9
Allow the finished tart to cool before removing it from the pan.
