
Pear Pie with Honey-Lemon Spiced Filling

Ingredients
- Wheat Flour 5 oz
- Butter 5 oz
- Water 5 tablespoons
- Pears 2 pieces
- Meyer Lemon Juice 0 fl oz
- Honey 5 oz
- Farm fresh eggs 2 pieces
- Cinnamon to taste
- Ground Almonds to taste
- Ground clove to taste
Step-by-Step Guide
Step 1
Make the flaky chopped dough. On a floured board, cut the cold (!) butter into small cubes using a knife. This will create buttery flour clumps. Make a well, pour in the ice-cold water, and quickly (!) knead the dough. Roll out the dough on a floured surface. Place it in a baking dish and send it to the freezer for 15 minutes.
Step 2
Slice the pears into thin pieces. Remove the chilled dough, make several holes with a fork, and arrange the fruit on top. Bake in a preheated oven at 390°F for 20 minutes.
Step 3
Meanwhile, prepare the sauce. Beat two eggs, add the juice of half a lemon, 2 tablespoons of flour, 1 teaspoon of cinnamon, ground cloves, and mix well. Incorporate the honey and stir until homogeneous.
Step 4
After 20 minutes, remove the dish from the oven and pour the sauce over the pears (it will be quite liquid, don't worry). Sprinkle ground nuts on top. Bake for an additional 40 minutes at 320°F.
