Pear Pancakes with Crispy Bacon
Ingredients
- Chicken Egg 3 pieces
- Salt a pinch
- Ground Nutmeg a pinch
- Wheat Flour 5 oz
- Milk 10 fl oz
- Clarified Butter 5 oz
- Pears 3 pieces
- Peach Juice 5 fl oz
- Cinnamon 1 piece
- Chopped almonds 10 pieces
- Roquefort cheese 5 oz
- Bacon 5 oz
Step-by-Step Guide
Step 1
Mix eggs with salt, nutmeg, and flour thoroughly. Pour in 300 ml of milk and let the batter rest for 30 minutes. Meanwhile, wash the pears, dry them, peel, and slice them into 2 mm thick rings. Optionally, remove the cores. You will need 16 rings for the pancakes.
Step 2
Cut the remaining pear rings into small cubes, immerse them in pear juice or nectar, add a cinnamon stick, and blanch until the pear pieces soften. Set aside. If necessary, add a little more milk and melted butter (4 tablespoons) to the batter.
Step 3
Heat some clarified butter in a frying pan and pour in a quarter of the batter. When the bottom of the pancake is slightly browned, press the pear rings into the semi-liquid batter, flip the frying pan, and cook the pancake on the other side until done. Repeat with the remaining batter. Sprinkle grated cheese on top and place in the oven at 210°F.
Step 4
Fry the bacon until crispy. Serve the pancakes on warmed plates. Top with chopped walnuts and bacon, and drizzle with pear juice.
