  • Wheat Flour 5 oz
  • Butter 5 oz
  • Sugar 5 oz
  • Whole egg 1 piece
  • Water 1 tablespoon
  • Pears 2 pieces
  • Chicken Egg 1 piece
  • 10% cream 5 fl oz
  • Corn Flour for Polenta 1 tablespoon

Step-by-Step Guide

Step 1

Place the sifted flour, diced butter, 50 grams of sugar, yolk, and 1 tablespoon of cold water into a large bowl and knead until smooth.

Step 2

Preheat the oven to 355°F and place a baking tray inside (the pie should be placed on a hot tray). Roll out the dough into a thin layer (if rolling out is difficult, simply spread it in the form and level it), lay it in a low baking dish so that the bottom and sides are covered, make frequent pricks on the surface with a fork, and refrigerate for 30 minutes. Then transfer to the oven for 20 minutes. Remove the dough along with the baking tray and increase the oven temperature to 390°F.

Step 3

Wash the pears, cut them in half lengthwise, and remove the core. Slice the pear halves into thin longitudinal slices, keeping the original shape of the pear. Sprinkle the prepared pie base with corn flour. Using a wide spatula, place the sliced pears on the dough, slightly shifting the slices with your hands to create a wavy surface.

Step 4

Beat the egg and 50 grams of sugar with a mixer for 1 minute. While continuing to beat, add 1 tablespoon of flour and the cream.

Step 5

Carefully pour the cream mixture and place in the oven for 25 minutes. Allow to cool slightly, then remove from the form and cut into serving pieces. Serve warm. Enjoy your meal!
