
Pear and Cinnamon Muffins

Description
Attention: muffins should be baked only in a preheated oven! Otherwise, they won't rise. I have a less powerful oven at home, so I bake the muffins like this: for the first 5–7 minutes, I keep them at a high temperature, then I lower it and bake for another 20–25 minutes. This way, the muffins rise, and the bottom doesn't burn.
Ingredients
- Wheat Flour 10 oz
- Baking Powder 1½ teaspoons
- Ground Oats 5 oz
- Brown Sugar 5 oz
- Cinnamon ½ tablespoons
- Salt ½ teaspoons
- Safflower Oil 5 fl oz
- Farm fresh eggs 2 pieces
- Apple 10 oz
- Pears 5 oz
- 1% Kefir 5 fl oz
Step-by-Step Guide
Step 1
Preheat the oven to 400°F.
Step 2
Mix the flour, oats, baking powder, sugar, salt, and cinnamon.
Step 3
Add the grated apples and diced pears, and mix: the flour should coat all the pieces to slow down the oxidation process.
Step 4
Combine the milk, oil, and eggs, then add to the batter and mix gently.
Step 5
Spoon the batter into greased muffin tins. You can sprinkle some sugar on top.
Step 6
Bake the muffins for 20–25 minutes until golden brown. Check for doneness with a wooden stick — it should come out dry after being inserted into a muffin.
