Pear and Blackberry Sorbet

Ingredients

  • Pears 2 pieces
  • Frozen black currant puree 1 cup
  • Sugar ½ cup
  • Water 5 fl oz
  • Meyer Lemon Juice 2 tablespoons

Step-by-Step Guide

Step 1

In a small saucepan, bring water and sugar to a boil until fully dissolved. Add the chopped pears and simmer for about 5–10 minutes, depending on their firmness. Add the thawed blackberries, and after a few minutes, you can turn off the heat. Add the lemon juice. Let it cool.

Step 2

Blend together with the syrup in a blender. If the consistency is too thick, you can add a little water and mix.

Step 3

Transfer the puree to a container and freeze for 2–2.5 hours, periodically breaking up ice crystals with a spoon.
