
Peanut Almond Cookies Without Oil and Flour

Description
If you don't have almond flour, you can lightly toast the almonds and grind them into a very fine crumb. You can also make peanut butter yourself; it takes about 7–9 minutes in a blender. I add salt and a couple of pinches of chili to mine.
Ingredients
- Peanut Butter 5 oz
- Almond 0 oz
- Egg white 1 piece
- Vanilla extract to taste
- Activated Baking Soda 1 teaspoon
- Sugar Substitute 1 tablespoon
Step-by-Step Guide
Step 1
Mix all the ingredients with a mixer on low speed, then knead with your hands. The dough should be pliable. If you have unsalted peanut butter, add a bit of coarse salt. You can also add cinnamon, rosemary (just a tiny bit for flavor), or other favorite spices to taste.
Step 2
Roll the dough into balls about 2 centimeters in diameter.
Step 3
Place the balls on a baking sheet about 4 cm apart and flatten them with a fork.
Step 4
Bake in a preheated oven at 355°F for 10–12 minutes. The cookies should remain slightly soft; they will harden as they cool (if they get a chance to cool before being eaten).
