Peach Parfait
Ingredients
- Canned Peaches 30 oz
- 10% cream 15 fl oz
- Sugar 5 oz
- Egg white 4 pieces
- Vanilla salt 0 oz
- Shortbread Cookies 5 oz
- Butter 0 oz
Step-by-Step Guide
Step 1
Puree the peach halves (without liquid) in a blender. Strain through a sieve or fine colander. Whisk the yolks, sugar, vanilla sugar, and peach puree thoroughly until the mixture noticeably increases in volume and lightens in color. Place over a water bath and cook for about 7–10 minutes, stirring constantly. Remove from heat and let cool completely. Then add the remaining peach puree and mix.
Step 2
Whip the cream until stiff peaks form. Add the peach mixture. Mix until homogeneous — the mixture should be airy, soft, and creamy. Place in the freezer for about 2–3 hours. Then take it out and mix thoroughly with a spatula. Divide the resulting mixture into silicone molds and place in the freezer until fully set.
Step 3
Place the cookies in a food processor and crush them into fine crumbs. Pour in the melted butter. Blend again in the food processor. Unmold the ice cream onto a plate, sprinkle shortbread crumbs and crushed almonds beside it.
