Peach and Rosé Champagne Sorbet
Ingredients
- Donut Peaches 30 oz
- Sugar ¾ cup
- Rosé Dry Wine 2 cups
- Light Corn Syrup 2 tablespoons
- Meyer Lemon Juice 1 tablespoon
Step-by-Step Guide
Step 1
In a saucepan, place whole peaches, sugar, and 1.5 cups of champagne. Bring to a boil, reduce heat, and simmer for about 15 minutes until the peaches are soft.
Step 2
Drain the syrup from the peaches into a bowl. Slightly cool the peaches.
Step 3
Peel the peaches and remove the pits, then cut them into small pieces. Transfer to a blender.
Step 4
Add the syrup to the peaches and blend until smooth. Add the remaining champagne, corn syrup, and lemon juice. Refrigerate for 15 minutes.
Step 5
Pour into an ice cream maker or container and freeze.
