Pea Soup with Smoked Sausage
Ingredients
- Snap Peas 1 cup
- Semi-Smoked Sausage 10 oz
- Salad Potatoes 2 pieces
- Carrot 1 piece
- Onion 1 piece
- Salt to taste
- Herbs to taste
- Bay leaf to taste
Step-by-Step Guide
Step 1
Rinse the peas and soak them in cold water for about 4 hours.
Step 2
Pour 2.5–3 liters of water into a pot, add the peas, and cook for about 1 hour until the peas are well cooked.
Step 3
Add diced potatoes. Cook for 5 minutes.
Step 4
Add the sausage, cut into strips or cubes. Cook for another 15 minutes until the potatoes are done.
Step 5
Sauté finely chopped onion and grated carrot in vegetable oil.
Step 6
Add the sautéed vegetables to the soup, season with salt, add the bay leaf and dried herbs. Cook for another 8–10 minutes.
Step 7
Before serving, add fresh herbs.
