Pea soup with smoked ribs and herbs
Ingredients
- Semi-Smoked Sausage 15 oz
- Pea shoots 10 oz
- Onion 2 pieces
- Carrot 1 piece
- Potato 3 pieces
- Parsley 1 piece
- Parsley 1 bunch
- Bay leaf 2 pieces
- Salt to taste
- Vegetable Oil 5 fl oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a pot of boiling water, add the peas and cook for about an hour. Take the smoked pork ribs with some fat, cut them along the meat, and if they are large, chop them in half. Cook them like regular meat in the broth along with the peas.

As soon as the peas are ready, add the diced potatoes, the sautéed vegetables, and the spices, and cook until the potatoes are done. Stir in finely chopped parsley, let it sit for 10 minutes, and serve.
