Actually, the cooking time depends on the type of peas. It is quite possible that one hour will be enough. You need to check to see if they are soft. If in doubt, it is better to cook for 1.5 hours. You can also slice the mushrooms, sauté them separately, and add them to the finished puree.

  • Pea shoots 1 cup
  • Fresh Mushrooms 10 oz
  • Sliced Processed Cheese 5 oz
  • Onion 1 piece
  • Carrot 1 piece
  • Garlic 2 cloves
  • Butter to taste
  • Salt to taste
  • Parsley to taste

Step-by-Step Guide

Step 1

Soak the peas in water (about 1.5 liters) for about 5 hours. Then, cook them in the same water for 1.5 hours.

Step 2

Peel and finely chop the onion. Peel and grate the carrot. Slice the mushrooms.

Step 3

Sauté them together with half of the cheese in butter. Add them to the peas 15 minutes before they are done.

Step 4

Transfer this to a blender, adding the remaining half of the cheese, and blend until smooth.

Step 5

Pour it back into the pot and bring to a boil.

Step 6

Add salt to taste and garnish with parsley.
