Pea Soup with Mint

Ingredients

  • Butter 1 tablespoon
  • Onion ½ piece
  • Green Peas 5 oz
  • Chicken Broth 15 fl oz
  • Fresh Mint ½ bunch
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Heat the butter in a pan and sauté the finely chopped onion until soft. Add the green peas and warm for one minute. Pour in the hot broth, bring to a boil, and cook for a few more minutes.

Step 2

Transfer the soup to a blender, add the mint leaves (set aside a handful of green peas and a few mint leaves for garnish). Purée until smooth. Season with salt and pepper to taste.

Step 3

Ladle the soup into bowls and garnish with green peas and mint.
