Ingredients
- Onion 1 head
- Salt to taste
- Chicken Broth 1⅕ l
- New Potatoes 5 oz
- Mint Leaves 0 oz
- Ground Black Pepper to taste

Step-by-Step Guide
Step 1
In a large pot, bring the broth to a boil, then add the peas, roughly chopped potatoes, a diced large onion, and mint leaves. Cook over low heat for fifteen to twenty minutes, until the vegetables are tender.
Step 2
Taste the soup, add spices to your liking, then remove it from the heat and let it cool.
Step 3
Use a blender to puree the soup.
Step 4
You can serve it immediately—cold, or you can warm it up before serving.
