Pea Dessert with Fresh Strawberries
Ingredients
- Peas 10 oz
- Butter 5 oz
- Strawberries 10 oz
- Coconut flakes 3 tablespoons
- Walnuts 2 tablespoons
- Powdered Sugar 1 cup
- Vanillin 1 teaspoon
Step-by-Step Guide
Step 1
Grind the dry peas in a blender as finely as possible. The granules should be the size of sugar crystals. The smaller, the better.
Step 2
Melt the butter in a skillet, add the pea flour, and sauté over medium heat for 20 minutes. Then add 2 tablespoons of coconut flakes, crushed walnuts, and vanillin. Sauté for another 10 minutes.
Step 3
Add the powdered sugar, mix, transfer to a baking sheet, and send to the oven for another 15 minutes. The mixture should brown, taste like nut paste, and the peas should not be detectable at all. Let it cool.
Step 4
Transfer the cooled mixture to a blender, add a little water, and puree. You need just a little water to soften the mixture, but it shouldn't become too liquid. The consistency should be like very, very thick crystallized honey.
Step 5
Separately, make a puree from fresh strawberries in a blender.
Step 6
Place the pea mixture in a container. Pour the strawberry puree on top and decorate with coconut flakes. Optionally, you can garnish with whipped cream or cottage cheese. Place in the refrigerator for a few hours to set well.
