Ingredients

  • Green Peas 5 oz
  • Leek ½ stalks
  • French Baguette ½ pieces
  • Salt to taste
  • Water 0 qt
  • Olive Oil 7 teaspoons
  • Garlic 4 cloves

Step-by-Step Guide

Step 1

Pour the peas into a pot (I use dried green split peas, so there's no need to soak them beforehand) with 2 liters of water. Cook until tender.

Step 2

Meanwhile, thinly slice the leek and sauté it in 1 tablespoon of olive oil.

Step 3

For the croutons, cut the bread into 3x3 cm cubes, then mix crushed garlic with 3-4 tablespoons of olive oil. Toss the bread cubes in the mixture.

Step 4

Sauté the croutons in 2 tablespoons of olive oil until golden brown.

Step 5

Blend the cooked peas, salt, and half of the leek until smooth using a blender.

Step 6

Serve with the remaining onion and croutons.
